Analysis of Nutritional Content in Frozen Fishery Products of Mackerel Infected by Anisakis sp.

Abstract

Scomber japonicus mackerel is an imported commodity with high nutritional content used in traditional fish processing in Indonesia. However, imported fish can be infected by endoparasites such as Anisakis sp. This research analyzes the nutritional composition (moisture, ash, protein, and fat content) of mackerel infected and uninfected with Anisakis sp. Fifteen mackerel samples were examined for organoleptic condition following SNI 4110:2014, parasite identification, and proximate analysis per AOAC 2005. Results showed no organoleptic differences between infected and uninfected samples. Of 15 samples, 10 were positive for Anisakis sp., with highest infection intensity in the intestine. Uninfected mackerel contained 62.00% water, 12.96% ash, 23.52% protein, and 12.28% fat. Infected samples (SM09) contained 62.81% water, 10.23% ash, 21.32% protein, and 10.73% fat, indicating decreased nutritional quality in parasitized fish.
